Ingredients
- 1½ cups dry brown or green lentils
- 1 tsp. olive oil
- ½ cup chopped onions
- 1 minced clove of garlic
- ¼ tsp. turmeric
- 3 cups of boiling water
- ½ tsp. ground cumin
- ½ tsp. Italian seasoning
- ½ tsp. salt
- ¼ tsp. ground black pepper
- Fresh cilantro for serving (optional)
Instructions
- Place the lentils in a large mixing bowl and remove any debris. Rinse the lentils thoroughly and drain. Pour enough boiling water over the lentils to cover them completely. Let the lentils soak for 10-15 minutes and set aside
- In a large pot or 4 quart Dutch oven, heat oil over medium heat. Add onions, garlic, and turmeric
- Saute for 2-3 minutes or until the onions are soft and translucent. Pour 1 cup of boiling water into the pot and stir together
- Drain the lentils rinse them thoroughly and drain again. Stir the lentils into the pot along with the remaining 2 cups of boiling water, cumin, Italian seasoning, salt and pepper. Increase the heat to high and bring o a boil. Once boiling reduce the heat to low, cover and simmer for 15 minutes
- Once lentils are solf, season with more salt and pepper to taste. Serve over brown or white rice, coconut rice, or a rice pilaf with a sprinkle of fresh cilantro on top. You can also serve on its own with naan bread, pita bread, biscuits or dinner rolls for dipping
