Spinach-Mushroom Scrambled Eggs

  1. In a small bowl whisk together eggs, egg whites, salt and pepper until well blended
  2. In a small nonstick pan over medium-high heat melt the butter or margarine. Add mushrooms and cook stirring occasionally for 3-4 minutes or until tender
  3. Add the spinach and continue to cook and stir until it is wilted
  4. Reduce the heat to medium
  5. Pour in the egg mixture and cook stirring gently until the eggs are just set and no liquid remains
  6. Sprinkle with cheese and stir until melted
  7. Enjoy
