Banana Baked Oatmeal

Ingredients

  • 2 cups rolled or quick oats
  • ½ cup raisins
  • 2 tsp. cinnamon
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 2 peeled bananas
  • 1 cup low-fat milk
  • 1 egg
  • 1 tsp. vanilla

Instructions

  • Preheat the oven to 350°F
  • Ina bowl combine the oats, raisins, cinnamon, baking powder and salt. Stir to mix
  • In a seperate bowl mash the banana with a fork. Add the milk, egg and vanilla. Stir until well blended
  • Pour the wet ingredients into the dry ingredients. Stir until fully combined
  • Transfer the oatmeal mixture into an 8×8-inch baking dish or bread pan
  • Bake for 25-30 minutes
  • Enjoy!
