Ingredients
- 4 medium sweet potatoes or roughly 4 cups of sweet potatoes
- 1 medium apple chopped
- ½ cup fat-free coconut Greek yogurt or yogurt of your choosing
- 2 tbsp. maple syrup
- ¼ cup toasted unsweetened coconut flakes (optional)
Instructions
- Preheat oven to 400°F. Place potatoes on a foil-lined baking sheet. Bake until tender 45-60 minutes
- With a sharp knife cut an “X†in each potato. Fluff pulp with a fork. Top with remaining ingredients
