Ingredients:
- 1 ½ cups dried red lentils
- 2 large garlic cloves
- 1 large shallot or 1 small onion (about ⅓ cup)
- 1/3 cup grated carrots
- 1 tablespoon tomato paste
- 1/4 cup chopped fresh cilantro
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- Neutral flavored cooking oil for pan frying (optional)
Instructions:
- Soak Lentils: Cover red lentils with about 2 inches of water and soak for 2 hours. Drain thoroughly.
- Make Burger Mixture: In a food processor or blender, combine drained lentils, minced garlic, diced shallot, grated carrot, tomato paste, chopped cilantro, salt, and pepper. Pulse until the mixture is well combined and sticks together when pressed. Do not over-process — keep a bit of texture.
- Form Patties: Scoop about ¼ cup of the mixture and form into patties about ½ inch thick. Makes around 12 patties.
- Cook Patties (choose one method):
- Bake: Preheat oven to 400°F. Place patties on a lined baking sheet. Bake for 10 minutes, flip, and bake another 10 minutes until crispy.
- Pan-Fry: Heat a thin layer of neutral oil in a skillet over medium heat. Cook patties about 4 minutes per side until golden brown and crispy.
