Ingredients
- 2 large eggs
- 2 large egg whites
- â…› tsp. salt
- â…› tsp. pepper
- 1 tsp. butter or margarine
- ½ cup thinly sliced fresh mushrooms
- ½ cup fresh baby spinach chopped
- 2 tbsp. shredded cheese
Instructions
- In a small bowl whisk together eggs, egg whites, salt and pepper until well blended
- In a small nonstick pan over medium-high heat melt the butter or margarine. Add mushrooms and cook stirring occasionally for 3-4 minutes or until tender
- Add the spinach and continue to cook and stir until it is wilted
- Reduce the heat to medium
- Pour in the egg mixture and cook stirring gently until the eggs are just set and no liquid remains
- Sprinkle with cheese and stir until melted
- Enjoy
